The Thau lagoon, exceptional biodiversity reserve.

The Thau lagoon, exceptional biodiversity reserve.

And yes the sun is often at the rendezvous on the Thau lagoon.

Bouzigues is a small fishing port facing Mont Saint Clair and the town of Séte.

In good weather Mont Saint Loup appears to the west facing the sea.

You can take the boats and you sneak in this unique natural environment between the tables where at the end of the ropes push the Bouzigues oysters.

They are sold by weight. Appreciated by shellfish lovers for their pronounced iodine flavor. The numbers 2 and 3 are often fleshy with a nutty taste in the final.

In the region we consume them with lemon and a classic Picpoul de Pinet whose vines border the pond

Our preference Château de La Mirande in Castelnau-de-Guers.

A dry white wine with light aromas of hazelnuts, balanced and short.

A classic Pinet picpoul.

Here are some surprising alliances with white wines from other horizons

Domaine de Villargeau Coteaux du Giennois by Marc Thibault in Pougny

Pale golden yellow color, brilliant.

Intense nose first on citrus zest and then on fresh grass.

Frank attack, beautiful mouth on notes of citrus supplemented by a mineral point.

Albarino Sao del Coster X Rias Baixas

Pale yellow color, nose with floral and citrus notes.

Lively, very fresh, with a hint of exoticism (lime).
