Although Germany is the world's leading producer of Riesling, this grape variety is also very present in Australia. Production is concentrated about a hundred kilometres north of Adelaide, particularly in the Clare Valley.
This wine comes from the highest vineyard in the Springvale region (460 metres). The soil is predominantly topsoil over a limestone and slate substrate. This vineyard produces larger bunches than Polish Hill. The vineyard is planted with three different Riesling clones (two German clones and one French clone). Hand-picked, grapes de-stemmed. Parcel fermentations by clone and by age of the vines.

Tasting notes:

This wine has a bouquet with notes of citrus fruits, lime zest and lime blossom. On the palate, it is intense with a nice freshness and a beautiful mineralitý that its terroir brings. This wine is precise, lively and chiseled with a refreshing mineral finish.
This is an excellent example of an Australian Riesling that can be cellared for up to 15 years and has a unique identity.

Wine style :

Dry, mineral white wine.

Food and wine pairing:

Crispy sweetbreads with dried citrus fruit chutney. Pike dumplings with Nantua sauce.
