Dom Perignon
Vintage Brut 2008
Champagne
Dressed in a bottle with a rare aesthetic and a timeless label, this cuvée was born in 1935 to celebrate the centenary of the London agent of Moët and Chandon, Simon Brothers & Co. It owes its name to the cellarer, the in charge of supplies, of the Benedictine abbey of Hautvillers, Pierre Pérignon. This exact contemporary of Louis XIV (1638-1715) is renowned as the father of champagne. If it is disputed that he was the inventor of bubbles and the cork stopper, Dom Pérignon, as a genius taster, is unanimously recognized as the precursor of the assembly of different vintages, thus opening up to champagnes an infinite range of subtle flavors.
The art of blending is characteristic of the Dom Pérignon cuvée. The wines do not come from particular terroirs, but express the ancestral know-how of the cellar master, in the great tradition of the famous Benedictine monk. It is only offered in the great years in order to always be worthy of its rank.
Grape varieties:
52% chardonnay, 48% pinot noir.
Tasting Notes:
In a decade of sunny and generous character, 2008 will be marked by the climatic contrasts that punctuated the course of the year. After gray months, the harvest took place in perfect conditions with grapes having reached an optimal stage of maturity.
Aromatic purity, acidity, precision, all the conditions were met to give birth to a great champagne.
Radiant, luminous, the bouquet of Dom Pérignon Vintage 2008 opens with the delicacy of scents of white flowers, tangy notes of citrus and stone fruit while scents of anise and mint bring a touch of freshness. Airing brings out the character of the spicy and roasted notes. It is on the palate that this exceptional champagne reveals the fullness of its personality, demonstrating an exemplary consistency between the notes perceived on the nose and the discovery on the palate. In a profile with a slender silhouette, refined, brilliant with liveliness and warmth, the wine reveals the purity of the fruit. The sharp acidity makes the cru evolve harmoniously on the palate, a sign of a champagne in perfect balance. In an extension with mineral and smoky notes, the persistence of the finish stretches with this delicious aromatic. Both fresh and warm, Dom Pérignon Vintage 2008 will combine perfectly with unions of textures and flavors highlighting its daring duality of character.
