The label of this cuvée is the result of the meeting of Karine and Nicolas Mirouze with an artist, Philippe Nivez. Their journey is made up of sharing which has enriched their winegrowing adventure.
The Cuvée Ciel came after the Cuvée Sol en Corbières as an echo of the concentration of the Sol towards a more aerial side of the Ciel.

               

Grape varieties :

50% carignan, 30% syrah and 20% grenache noir

Vinification: De-stemming, indigenous yeasts, maceration for about ten days, gentle pumping over.

Tasting notes :

Black fruit, spice, clean mouthfeel with tannins that underline the tension of this wine.

Thick roasted veal chop, rose on the bone, creamy polenta with fresh rosemary. Cassolette of petits gris with smoked bacon and roasted apples.
