In this superb region of Gargano, north of Puglia, Valentina Passalacqua runs her estate, the “Progetto Calcarius”, under organic certification since 1999. She puts into practice biodynamic practices in addition, aiming to preserve the biodiversity of this terroir which is located near a protected national park and the sea. The soil is composed of white limestone Kimmeridgian stones which help to shape a chiseled and saline expression of its wines. It displays on its labels the numbers 20 and 40.08 in reference to limestone, a great marker of this Apulian terroir. The number 20 is thus the atomic number of calcium (Ca) and 40.08 its atomic weight.
The straw yellow color with light green reflections, the wine is cloudy because it is unfiltered, with good acidity and a low alcoholic degree. Citrus notes (lemon, orange, grapefruit) dominate and reinforce the sensation of freshness in the mouth.
Dry and fruity white wine.
Food and wine :
Sea bream carpaccio with pink berries and iodized emulsion, timut pepper from Nepal. Seafood risotto with tangerine supremes.
