"Cuvée des Docteurs" refers to the medical students who came to help Lucien Aviet during the harvest in the early years.

           

Grape varieties:

100% red tail melon.
Red tail melon is a white grape from the same family as Chardonnay. The vines come from a mass selection, small light berries but with a stem (tail) that turns red as the grapes ripen. Ripe grapes are golden, sometimes turning a little pink, and give a white wine of great finesse, often with exotic aromas, citrus fruits and minerals as well.

Tasting Notes:

This red-tailed melon cuvée, local expression of a grape variety related to Chardonnay, offers a clear and digestible profile despite a certain richness. The nose is very floral with a hint of toasted hazelnut. The palate, although voluminous, remains fresh. A wine rich in finesse and elegance.

Dry and complex white wine.

Food and wine :

Turbot cooked on the bone, cashew nut butter. Dill-flavored gravlax salmon and salmon roe rolled in roasted almond powder.
