Domaine Gauby is worked biodynamically, on limestone, clay-limestone and schist soils.
Grenache noir, carignan mainly, mourvèdre in addition.
Vines between 30 and 95 years old.
The Muntada cuvée produced on limestone marls is fleshy, juicy and complex. Its intense aromas of black fruits, blood orange, spices, leather and woody notes are offered during festivals. Fleshy and deep, complex and fine, built on juicy fruits (red and black), revealing a subtly spicy character (liquorice, thyme, pepper) enhanced by floral, leather, empyreumatic touches. Silky tannins, acidity bringing freshness and balance, long lingering finish. A nice acidity brings freshness and the tannins are silky.
A great wine from Roussillon combining finesse and power.

Roasted leg of lamb from the Cathar country and its potatoes with porcini mushrooms. Bazas sirloin steak, bordelaise sauce.
