A variety very long ago introduced in the southwest, Reine-Claude dorée is used in the cauldrons of jam makers, distillers and liquor makers. Processed one by one manually, these organic Reine Claude are separated from their tails and cores. It is only mature skins and flesh which after a long fermentation and gentle distillation bring their deep and subtle aroma.

     

Dress: As Byron (1817) said: "... in a dress of clouds, with a tiara of snow" she presents herself to us. It is limpid, shiny and luminous. And these reflections are those that the light consents to give it.

Nose: From the first nose, we perceive its amplitude, its complexity, which combines both concentration / freshness / smoothness / generosity / density / mellowness.
The 2nd nose reveals a multitude of fruity / floral scents, through which discrete flavors of old-fashioned pie emerge with brown sugar. Beyond these primary observations, it develops like a metronome.

•     White / yellow / dry / dried / exotic fruits (apple, pear, peach) (mirabelle plum, quince, apricot) (almonds, hazelnuts) (date, fig) (pineapple, papaya, passion) (plum);

•     Citrus fruits (lemon, tangerine, pomelo) (blood orange / bigarade / sweet both in its peels but also in the flesh of the fruit);

•     Vegetal (jasmine, bergamot, fern);

•     Infusion (lime blossom, verbena, green tea);

•     Spices (vanilla, cinnamon, cardamom);

•     Pastry (Tatin, strudel);

•     Confectionery (Flavigny pastilles);

•     Liqueur from Montserrat;

•     fresh almonds / dates;

•     Mineral.

Palate: It is (the attack) the extension of the nose. It is a rainbow of states: oily, rich, delicious, creamy, aromatic, sappy, lively. It is based on a mishmash of melting, even stewed fruits.
The acidity is present without exuberance and is based on a noble plant (fern, orchids): the essential essences of bergamot, jasmine, fern, citrus peel bring a feeling of verticality and a renewal of vitality.
Alcohol builds the material both in its verticality and in its horizontality sitting on a very solid pedestal.
The material, accompanied in the background by confectionery (Anise, Flavigny pastilles), is soft, fatty with residual bergamot sugars present but refined and delicious. The finish, spherical and slender, is marked by refreshing minerality. She slides on a base of beautiful bitters. It is escorted by peppery notes and makes us bite into a melting fruit, without any mannered effects ....
