The Ultimate is a Dutch whisky bottler active since 1994 and specializes in the setting of unique barrels. With exceptions, the barrels are reduced to 46%.

To get to Caol Ila, you have to turn left, just before the charming port of Port Askaig, and venture on the small steep road that winds up the hill. Many visitors would like to take up residence on the shore of Caol Ila, separated from the island of Jura by an inlet barely wider than a large river but impassable on stormy days.

While the distillery's cubic buildings are devoid of charm, the imposing stills room enjoys stunning views of the heath-covered heath-covered Jura. And when a rainbow unites the two shores, the metamorphosis is grandiose.

The distillery was completely rebuilt in 1972, the kiln was razed and the stills increased from two to six between 1972 and 1974. In the shape of an onion, they are huge, with a wide and long swan neck, yet they are loaded only to half their capacity, in order to facilitate reflux. Peat malt, on the other hand, comes from the Port Ellen malting plant.

Caol Ila also produces an undybreded malt. Originally intended for blenders, it is now available as a single malt to the delight of its aficionados. Caol Ila is by far the most productive distillery in Islay. Almost all of the production is transported by tanker and ferry to the mainland to age in the diageo group's cellars, often far from the sea. Yet even if this single malt has not known the iodized air of Islay, it can not hide its marine origins.

The official range has been greatly expanded in recent years. There are also many versions of Caol Ila among independent bottlers. It must be said that this Islay, very popular among master assemblers, is also the favorite malt of many amateurs. Perhaps for its changing aromatic profile, like a rainbow?
