Manual harvest which takes place during the first half of October.
Fermentation and maceration for 3 weeks in 10,000 kg concrete vats. Malolactic fermentation takes place in new French oak barrels, as well as a 16-month aging. This wine has not been filtered and has been clarified without using aggressive procedures.
Deep cherry red color with purple reflections on the edge. Great aromatic intensity, with aromas of ripe black fruits, well integrated with the toasted, spicy and smoky notes of the barrel. On the palate, it is full-bodied and fleshy with very ripe and round tannins which make it soft. The finish is long and persistent, the notes of ripe fruit reappear and are very well integrated with the roasting of the wood.

Food and wine :
Rack of Quercy lamb in an olive crust, sautéed potatoes with thyme / rosemary. Wet rooster with tempranillo, turnips and roasted tuberous chervil.
