A small family estate of 8 hectares, Rémi Jobard works the soil and uses only organic compost. After a manual harvest, the wines are raised in its cellars and bottled after 18 months, without filtration.
The "Under the Velle" meursault, grown on gravel and on fairly dry soil, has a pleasant nose of peach and soft pear. After aeration, the minerality emerges, accompanied by sweet spices. In the mouth, hawthorn and stone are present and finesse characterizes it.
Deep and complex white wine.
Food and wine pairings:
Lotte dieppoise, fennel confit with butter, mustard sauce with combawa. Scallop carpaccio marinated in celery branch, lime and olive oil.
