Aurélien Suenen left the basketball courts of Châlons-en-Champagne to return to the chalk of his family's vineyards in the Côte des Blancs in 2009. Following in his father's footsteps, the young man has gradually changed his farming methods (abandoning herbicides and insecticides in 2012) and restructured the vineyard, which consists of 3 hectares in Oiry, Cramant and Chouilly for the Chardonnays, and a 20-acre block of free-run meuniers in the Vesle valley. Intuition leads the winemaker to blend parcels in his non-vintage cuvées such as Oiry (vines on the lower slopes)

Clay and silt soil, with a subsoil of chalk from the upper Campanian period and facing mostly south.
Average age of the vineyard 38 years.

100% chardonnay

Tasting notes:

This wine reveals a very fine bubble, aromas of fresh fruit, citrus, as well as buttery and vanilla notes reminiscent of brioche from the oven. The palate is intense, luminous, chalky, transcendent of minerality. Very nice chiselled texture and great aromatic freshness on the finish. A great and impressive wine!

Fillet of sole with crunchy vegetables and hazelnuts. Saddle of rabbit with white miso, turnip mousseline with champagne.
