This Coccinella cuvée comes from vines cultivated on the Feudo Guarini hill (Trapani) at an altitude of 300 m. They are based on a clay-limestone soil, rich in organic substances, which presents an unbeatable health, thanks to the ecological, biological and biodynamic techniques implemented.
The harvest is carried out manually, when the grapes have reached their optimum maturity. After partial destemming in the cellar, the grapes undergo spontaneous fermentation with indigenous yeasts in stainless steel vats and maceration for two weeks. The resulting wine then ages for ten months in stainless steel tanks and for three months in the bottle. The wine is bottled without filtration and with a minimum of sulphites.
Juicy wine with aromas of red fruits: red berries and plum, with marine notes. The mouth gives off the same aromas as the nose. It is fruity, mineral, with a balsamic touch. Lively, balanced, with a satiny texture, it is a very beautiful natural Syrah.
Complex and elegant red wine.
Food and wine :
Black pork chop with Syrah branches, ratatouille with southern vegetables. Partridge confit with Colonnata bacon, braised Brussels sprouts.
