I Clivi is a family estate of 12 hectares of certified organic vineyards planted with the indigenous ribolla gialla, friulano, verduzzo and malvasia grape varieties in Friuli between Collio Goriziano and the eastern hill of Udine, near the Slovenian border. The vines are between 60 and 80 years old, which produces low yields of extraordinarily aromatic grapes. The concentration and complexity of the fruit are found in i Clivi wines, which are crisp, precise and show great personality.
The grapes are harvested by hand and gently pressed, fermented in stainless steel vats with indigenous yeasts and aged for six months on lees, also in stainless steel. After aging, the wine is lightly filtered with a minimum of SO2 added during bottling.

The nose is marked by aromas of lemon zest and rocks. The palate is textured, with refreshing acidity paired with a long, very dry, salty mineral finish. A fine example of ribolla gialla.
Dry and mineral white wine.
Food and wine :
Citrus sea urchin cream, grilled bresaola and combawa. Salmon tartare, lemon juice, dill and sesame.
