Calaiancu is a mineral and concentrated white wine, made mainly from grillo with a small amount of catarratto. Calaiancu perfectly captures the Sicilian style with aromas of fresh oranges, spray and white flowers with a rich texture enhanced by nice acidity.

Lobster risotto, parmesan shavings from thirty months of ripening. Carpaccio of Saint-Jacques and sea urchin cream, buttered toast with truffle.
