Yves Falmet is based in the Languedoc region of France in the Saint-Chinian appellation.
He has fallen under the spell of this authentic place and cultivates his vines like his garden.

In 2001, he planted three plots of Mourvèdre, a total of 4 ha, on his hillsides. This grape variety thrives here because it requires sunshine and water, two elements that it finds naturally on this terroir. A late variety with a tendency to over-ripen in production, it only matures if it is cultivated skilfully and on the rare soils that lend themselves to it.

    Tasting notes :
Intense ruby colour with purple hues. The nose is peppery, rich in aromas of spices, garrigue, blackcurrant and blackberry. On the palate, it is very full-bodied, tannic, but with plenty of roundness, good flesh, minerality and also the expression of black fruits, heady, with a spicy finish.

Structured and full-bodied wine.

  Food and wine pairing :
Lamb tagine with lemon and black olives. Duck aiguillettes glazed with orange and ginger.
