Cartology is the representation of Chris and Suzaan's desire to 'map' the heritage of old South African vines and bottle their essence.

Grape varieties:

90% chenin and 10% semillon, from different parcels that are between 30 and 50 years old.
Hand picked, indigenous yeast. Whole bunch pressing. Fermentation in foudres, amphorae and oval tanks.
Aging: 12 months on lees in the same containers, then 6 months in vats on fine lees.

Tasting notes:

What intensity! The beeswax on the nose is accompanied by liquid honey (although this is a dry wine) and a real tannic sensation on the palate. Very tense but with a lot of greed. It's still very young, but it's hard to resist. The finish is very intense. This is a very nice wine!

Wine style :

Elegant and complex dry white wine.

Food and wine pairing:

Capon supreme and quince purée. Monkfish tail and saffron risotto with shellfish sauce.
