Château Combel-la-Serre is a family estate located 17 km from Cahors on the Cournou plateau, at an altitude of 300 metres. It is run by a father and son, Jean-Pierre and Julien llbert, who strive to constantly seek fruit and freshness in their wines.
The vineyard of Château Combel-la-Serre has 26 hectares of vines, mainly planted on clay-limestone soil. The vineyard is certified BIO (ECOCERT), demonstrating the desire to respect the vines and the terroirs.

                       

Grape varieties :

Malbec (Côt)
The wine is made in a small stainless steel cellar (mutage of the fresh grape must with eau de vie) and then aged for about a year in old 225-litre barrels.

Tasting notes:

The colour is deep with coppery hues. Made from fresh grape must and eau de vie (liqueur wine), this ratafia surprises with its very characteristic aromas of raspberry and blackcurrant. Then develop aromas of griot and juicy cherry. The whole reveals a pleasantly greedy and unctuous round mouth, finishing on candied and spicy notes.

Semi-cooked goose foie gras lacquered with apple syrup. Tarte tatin.
