Mark Reynier, the former co-owner of Bruichladdich founded the Waterford distillery in 2015. Keen to emphasise the notion of terroir, he works closely with around 100 Irish farmers. In 2016, he produced the first organic Irish malt distillate and more recently, following the example of the greatest winemakers, he decided to distil a whisky from biodynamically grown barley.
This bottling is part of the Arcadian series, an unconventional range of organic, biodynamic and heritage distillates.
Luna 1.1 is the first whisky to be made solely from biodynamic barley. To achieve this, Waterford worked with three barley growers in Ireland who practice biodynamic farming: Trevor Harris, John McDonnell and Alan Mooney. The Waterford growers have adopted biodynamic practices, including planting seeds according to specific phases of the moon, using horses to plough instead of machinery and burying cow horns filled with manure at certain times of the year for fertilisation benefits. The aim is to produce a living, chemical-free soil.
This Luna 1.1 whisky was matured in a combination of 35% first fill American oak casks, 17% new American oak casks, 26% premium French oak casks and 22% oak casks that had contained natural sweet wine.

                      

Tasting note:

Unpeated.

Colour: Apricot

Nose: Straight and rich. Plum, apricot marmalade, fresh fruit salad, iced coffee, lemon cake, milk chocolate and almonds, herbal tea and freshly cut hay notes, with a nice minerality.

Palate: Taut, spicy and vegetal. The spices (cloves, white pepper) are present throughout the tasting, accompanied by notes of dark chocolate, liquorice, malt and grapefruit, but also by vegetal flavours of great originality for a whisky, such as green peppers, jalapeños or peppermint tea.

Finish: Delicate and complex. The spicy bouquet on the palate continues to develop, with a slight acidity worthy of great dry white wines.

This is an incredibly different single malt, evoking the minerality of the soil and the vegetal notes of the barley on tasting, while retaining the very malty, greedy and spicy character that has made Waterford whiskies so successful.
With a remarkable tension, like a great white wine from the Loire, for example, this single malt placed under the protection of the Moon is at once complex, original and pleasant.
