This wine has the same main characteristics as the fino but is obtained from a significantly different terroir and maturing environment. Manzanilla is a jerez, aged in the bodegas of Sanlúcar de Barrameda, a small town on the Guadalquivir estuary. It is often said that the iodine-rich sea air infuses the wines while they are in barrel, giving them a saline quality that is distinct from the classic finos made in Jerez de la Frontera.

The very special microclimate of the winery, located at the mouth of the Guadalquivir River, favours the development of a flora with very particular organoleptic characteristics. This biological ageing continues for a period of three to four years and is carried out in American oak barrels according to the traditional system of "criaderas" and "solera".

Tasting notes:

Straw yellow in colour, this is a wine with intense aromas of dried fruit (walnuts and toasted almonds), brioche, chalk, and aromatic herbal notes. On the palate, it is a fresh and mineral wine with a beautiful finesse, while keeping a certain roundness and unctuousness. A long and persistent finish with toasty notes, a pleasant bitterness and a hint of salinity.

Moroccan-style chicken tajine with lemon. Salmon tartar with lime, crunchy fennel and tangy honey.
