He does not plow to preserve flora and fauna. The vinification is non-interventionist and the bunches of white grapes are pressed without destemming, fermented in indigenous yeasts and aged on lees in large neutral wooden containers that vary from 400 to 2000 liters.
Beautiful aromatic palette, very fresh on the nose with notes of white fruits, green apple, melon and apricot. Mouth of beautiful radiance, digestible, saline with a nice tension and freshness. Nice energy on the finish.
Dry and mineral white wine.

Thyme seafood fricassee, Judion de la Granja. Steamed prawns in a mixture of spices, julienned zucchini and pears.
