Oxfordian Jurassic, marine origin. 150 million years old. Southern exposure, steep slope. Low organic content, very stony, rich in pebbles, fossiliferous slabs and fine grey clay.

Tasting notes:

This wine has a golden colour with green highlights. The nose has aromas of flowers, citrus fruit and acidic white fruit (green apple). Well-balanced on the palate, with notes of acidulous fruit. A wine with finesse, straight and airy, with great purity. On the palate, it is an exciting, fine and long Sancerre. A wine that soars with precision in a slender, floral and mineral expression, expressing the chalky and iodized character of the soil. A great sauvignon wine!

Normandy oysters au gratin with citrus fruits and sea urchin cream. Rabbit saddles with Sancerre, sautéed chanterelles with black garlic.
