The Thibault family chose to create the Domaine de Villargeau in 1991, on land with a south-western exposure and maximum sunshine.
This 20 hectare vineyard is planted with 3/4 Sauvignon Blanc.

   
The geological history of the formation of the Loire depression explains the diversity of the soils:

- On the one hand, the flint offers all its potential to the Sauvignon, which expresses itself there with delicacy and fruitiness.

- On the other hand, the Kimmeridgian marl on clay-limestone soil allows the Pinot Noir and Gamay to develop a good balance between substance, fruitiness and freshness.

Clay with flint

     Vine growing :
Naturally grassed vines.
Guyot Poussard pruning.
Severe disbudding (regulation of 16 bunches per vine).
The soil is worked using integrated viticulture.

      Tasting notes :
The colour is light yellow and very clear. The nose is expressive, with ripe fruit and fruit paste (citrus, lemon, quince). On the palate, the attack is nervous then the fullness develops with a chiselled finish on minerality.

Dry and deep white wine

     Food and wine pairing :
Carpaccio of trout with olive oil, crunchy spring onions and capers. Green monkfish curry with coconut milk.
