The Font des Ormes estate occupies the top of a slight limestone eminence dominating a vast expanse of vines between the villages of Caux and Nizas. It has a typical Languedoc architecture.
If the oldest parts date back to the 15th century. s., most of the building dates back to the 18th century. s.s. The landscape was then quite different, marked by the polyculture and the diversity of production: cereals, olive trees, truffle oaks, flower meadow ... This is what it's all about becoming this beautiful property again.
The landscape is being restructured and the 23 hectares of vines, 10 of which are in AOC Pézenas, now rub shoulders with 2 hectares of olive trees.

In Caux, in the region of Pézenas, languedoc, the Font des Ormes is undergoing a metamorphosis in an immutable setting, a valley bordered by two basalt flows. Ambition: to reflect in the wine the elegant and serene energy of the landscape.


With the complicity of the architect Ariel Balmassière, recret the decretied walls of the medieval hamlet, restore the frames, the tile roofs, recreate the subtle cameo of woodwork and fabrics. Revive the vine masets. Redesign the gardens. See again pulsating the chiseled lace of the tall pines on the ochre of the facades. From there, feel the underground call of the numb living. Invite Lydia and Claude Bourguignon, bring them to the hillside, to "Mexico", ancestral plot of carignan turbaned with iris. To enchant with them the rare marriage of limestone and basalt, the promising pink of the roots. Scrupulously follow their soil healer precepts. Encourage rebirth.


Designing wine as a tribute. A song. Imagine this landscape as a score discovered in an ancient music museum. Entrust it to young performers so that they can draw inspiration from a fresh version, full of flowing, fluidity, new vibrations. Where the mourvèdre would offer the tension of a continuous bass, the grenache a kind roundness, the carignan the familiar exoticism of its spices. Without ever forcing the line, nor giving in to the easy seduction of candied fruit. Rather accept a form of austerity, a whispered elegance, claim the penetrating modesty of a Languedoc that requires patience and is part of the long term. Like a faithful friendship.
