Vincent Aviet, son of Lucien known as “Bacchus”, a key figure in the Jura vineyards, perpetuates the traditional expression of local wines on plots of old vines.
Maintaining a classic style but far removed from any routine, these winegrowers produce wines of great sincerity, deeply rooted, which culminate with yellow wine and superb trousseaux declined by terroir.
The wines are quite rare and the amateurs are numerous: an area to follow very closely.

The Domaine Le Caveau de Bacchus has existed since the early 1960s. Created and operated by Lucien Aviet, the estate has been passed down from father to son. Lucien, also called Bacchus (god of wine) is a figure of the Jura vineyard. His estate has become a real institution, a business for enthusiasts that pays tribute to the Arbois terroir.


It is now Vincent Aviet, son of Lucien known as “Bacchus”, a key figure in the Jura vineyards, who perpetuates the traditional expression of local wines on plots of old vines located around the wonderful wine-growing village of Montigny-les-Arsures.


Maintaining a classic style but far removed from any routine, these winegrowers produce wines of great sincerity, deeply rooted, which culminate with yellow wine and superb trousseaux declined by terroir (remember that Montigny is the epicenter of the trousseau, cradle of the famous lady's trousseau, with very airy grains).



The 6 hectares of vines are located in the heart of the Jura vineyards, above Arbois, in Montigny-lès-Arsures. The vineyard is around 35 years old and consists exclusively of local grape varieties such as Trousseau or Savagnin. In the vineyard, reasoned pest management is used, the harvests are manual and by plot. Indeed, the Jura vineyard is steep and requires special care in order to preserve the integrity of each of the clusters.


The grape variety is typically Jurassic:


The trousseau is a red grape with lovely aromas of black cherry and kirsch. Fruity and peppery aromas bring greed, structure and body to the cuvées. At the Caveau de Bacchus, it is generous and fleshy.


Savagnin is used in the production of yellow wines. At the estate, this dry white wine, typical of the Jura. has undergone an oxidative aging of 8 years under veil of indigenous yeasts. These bring aromas of nuts to the wines.


The wines are quite rare and the amateurs are numerous: an area to follow very closely.
