Sophie Valin and François Aubry have been working in the Salagou valley since 2003, converting old vines to organic farming and re-establishing a herd of hardy sheep on 30 hectares of woodland and pasture.

Their first vines, old, not very productive, planted in goblets, were threatened with uprooting. For these old vines (carignan, cinsault, aramon, grenache noir and terret blanc), what a sad end!
A first harvest, vinified in 2003, convinced them of the exceptional potential of these ancestors and these soils.

Since then, they have made every effort to preserve this heritage: no more herbicides, no more chemical fertilisers or synthetic pesticides, but regular composting (thanks to the sheep!) and permanent natural grassing. Today the soil is alive again and biodiversity has returned to the vines.

The elaboration of the wines in the cellar is only the continuation of the work done all year long in the vineyard.

Each wine expresses the personality of each grape variety and each plot (geology, exposure).
Patient and meticulous manual harvesting and a natural vinification without inputs ensure that these potentialities are respected.
After maturing in vats for varying lengths of time depending on the grape variety and the vintage, the wines are bottled by gravity without fining or filtration.
