Somewhere on the edge of Languedoc, in the upper valley of the Aude. In the circus of Roquetaillade, a conch carved out of the great swell of the Pyrenean foothills, from one side to the other, from the scrubland to the undergrowth, Mediterranean and Atlantic climates clash. Crisp and crystalline air, peaceful atmosphere, cascading vines. The promise, of course, of wines apart.
Originally from the village, Gilles Azam bought his first vine in 2000, then patiently set each milestone in a 13 hectare certified organic estate.

Grape varieties:

100% pinot noir.
12 months on slats. Non dosed (Brut nature)

Tasting Notes:

Beautiful sparkle sustained in a cord and salmon color. The nose is concentrated on the aromas of fresh red fruits, blackcurrant bud supported by appetizing mineral notes. On the palate, a superb vinosity for a touch of bubble of fine finesse that extends over a tonic and persistent finish.

Braised farm guinea fowl, creamy sweet potato. Slices of trout gravlax style and caviar from Val d'Aran.
