This La Canopée cuvée is the unique expression of Petit Manseng picked at high maturity (November harvest!). A great dry wine.

Grape varieties:
100% small manseng.
Fermentation in one-wine barrels and matured on total lees followed by stirring for 10 months.

Tasting Notes:

Upon visual examination, the richness of this wine appears through its pretty golden color. The nose is first musky, spicy then opens with aromas of raisins, medlar and quince to finish after airing with notes of candied apples and pineapple. The nervous and broad palate imposes the tone of an assuredly generous and slender wine. Tasty and powerful, the mid-palate develops notes of honey, ripe, finely stewed fruit with smoky and spicy notes. The finish then settles on an explosion of flavors where citrus fruits dominate and bring a lot of liveliness.

Wine style:

Aromatic and complex white wine.

Food and wine pairing:

Sweetbread braised with fennel, spiced and apricot jus. Crab gratin with coconut milk, combawa and green peppers.

12 years.
